Can I convert any video I find?
Technically any public one. Whether you should depends on what you do with it: transcribing to learn a part is normal practice, redistributing someone's work is not.
Does it work on Shorts?
Shorts are actually a good case, because they are short and usually feature one instrument up front.
Why does my result have notes that are not in the video?
Other instruments in the mix get picked up as pitches. Video with a single instrument playing gives the cleanest read, and the editor is there to delete the strays.
Can I get sheet music instead of MIDI?
The same conversion exports MusicXML, which opens in MuseScore and Sibelius, and PDF if you just want to print it.
